Buscando, he encontrado esta receta de la panadería La espiga de oro:
Ingredientes:

- 1 kg de Hariz de fuerza bio,

- 300 gramos de arroz cocido,

- 200 gramos de masa madre sólida,

- 100 gramos de mantequilla clarificada,

- 5 gramos de levadura química,

- 22 gramos de sal,

- 7 gramos de curry en polvo,

- 2 semillas de cardamomo,

- 500 gramos de agua.
Podrías explicar la elaboración y el formado?
Esa miga tiene una pinta fantástica.
Ona, enhorabuena, tus panes son siempre perfectos, en Enero o en Agosto.
Creo que la uniformidad es algo muy dificil, tener recursos para conseguir un resultado adaptándose a las circunstancias supone dominar una técnica

Yo hoy he horneado unos batards, que ya no nos quedaba pan.

28% semolina trigo duro
42% multicereales
18% trigo integral (variedad Grandal)
3% centeno integral y 9% fuerza (prefermentadas en la masa madre)
32% masa madre (mezcla de 25% trigo integral, 15% centeno integral y 60 % fuerza)
80% agua
1,5% sal

Autólisis de 1h sin la mama y sin la sal. Amasado con reposos y fermentación en bloque a TA durante 3 horas (con 3 pliegues, uno aprox. cada 45').
Preforma, formado y segunda en nevera de unas 10 horas.
