Yo tenía ganas ya de mis queridos panes trenzados. He hecho una corona de 5 cabos, otra de 3 cabos y una pelotilla.

Mientras no arreglan el hilo de panes creativos lo dejo por aquí.

50% trigo media fuerza
30% espelta T80 eco molida a piedra
20% centeno integral
20% masa madre sólida (mitad centeno integral, mitad trigo duro)
80% agua
2% sal

Autólisis de media hora si la mama y sin la sal (guardando 50 gramos de agua para añadir junto a la sal en el momento del amasado). Amasado con reposos hasta obtener una masa lisa y elástica (4 tandas de 5'). Fermentación en bloque de 3h 30' a Tª ambiente. Pre forma, reposo de 30' y formado. Segunda en nevera de unas 11h.
Me equivoqué en el horneado (sin darme cuenta, puse en horno a precalentar en función grill y sin calor desde abajo) con lo que se n subió bien y se desparramó un poco. Una pena porqué pintaba muy bien al meterlo en el horno.
